Kopi Arabika Organik Bangli-Bali: Dari Kebun ke Cangkir 20 November 2008

Kebun kopi arabika petani Subak Pengotan, tidak jauh dari lanskap Danau Batur yang dahsyat

Kami memulai perjalanan di kebun petani Subak Pengotan

Berdiskusi dengan petani sambil mengamati bunga kopi di sepanjang jalan

Menuju pengolahan kopi milik KSU Bale Dana Mesari 

Sampai di lokasi di Desa Pengotan, Kecamatan Kintamani, Kab. Bangli, Bali, Telp. 0366-51366

Proses pengolahan:
1. Buah kopi matang dipanen
2. Hasil panen di-rambang: buah kopi matang dimasukkan dalam bak berisi air untuk pemilahan/sortir

Bak diisi air, kemudian buah kopi hasil panen dimasukkan ke dalamnya

Yang “kopong”, jelek tidak berisi biji, akan mengapung untuk disingkirkan. Sisanya yang tenggelam ditiriskan dan dipindah ke:
3. Valver – Mesin Pengupas

Buah kopi pilahan/sortiran yang sudah ditiris airnya, dimasukkan ke dalam mesin pengupas (Valver)

Buah yang telah terkupas, biji kopinya kemudian akan diperam di:
4. Pemeram alias media untuk biji kopi menjalani fermentasi

Pemeraman selama 12 - 32 jam sesuai pesanan selera aroma kopi

5. Pencucian menggunakan rongoster
Biji kopi hasil peraman kemudian dicuci di mesin cuci (rongoster, bukan mrongoster ya..:)

6. Area penjemuran

Biji kopi setelah dicuci akan dijemur di bawah panas matahari

7. Huler
Usai dijemur, biji kopi kering yang masih berkulit ari akan diproses di huler untuk pengupasan

 8. Biji kopi hasil pengolahan akhir lewat huler

3 jenis kualitas biji kopi olahan (Biji OC): HS, Semi WOS, LOAC

9. Biji kopi olahan dipilih untuk digoreng sangrai (tanpa minyak) di mesin penggoreng (roaster) 

Roaster kapasitas 5 Kg. Disangrai di suhu 200C selama 15 menit

10. Biji kopi sangrai digiling di alat penggiling (grinder)

11. Bubuk kopi siap dikemas

Pengemasan manual dan dengan mesin

 12. Bubuk kopi arabika organik cap “B36”

Kiri ke kanan: kualitas 1 (ekspor), kualitas 2, dan kualitas 3

Berujung pada secangkir kopi arabika organik Bangli-Bali

Hmm… nikmatnya..

Jika suka takaran manis, bisa dicoba sajian saran ibu pengelola KSU Bale Dana Mesari:

  • 1 sendok (teh) bubuk kopi plus 2 sendok (teh) gula, diseduh dengan air mendidih… hmmm nikmati sensasi aroma dan rasanya.
  • Untuk aroma dan rasa orisinil, cukup dengan sesendok (teh) kopi diseduh air panas mendidih: Top markotop!

Sy mau bertanya, apa-apa saja keunggulan kopi arabika organik dibanding yang non-organik bagi konsumen?
karena sepengetahuan saya, harga kopi arabika organik sedikit lebih mahal dibanding yg non organik. sehingga masyarakat pd umumnya masih memilih mengkonsumsi kopi non-organik dibanding yg organik.
mohon informasix yg jelas.

Saudara Marda, terus terang kami belum tahu persis keunggulan kopi jenis yang satu dibanding dengan jenis yang lain.
Tentang organik dan non organik, kami kira ini masalah kesukaan/pilihan.
Ada segmen dan target konsumen tertentu yang memang memilih produk organik, walau imbalannya dengan harga beli yang lebih mahal (meski tidak selalu produk organik lebih mahal dari non organik).
Saya sendiri bukan penikmat kopi rutin dan terkadang muncul masalah kembung perut saat meminum kopi. Hanya saat mengkonsumsi arabica organik kintamani Bali tadi, syukur saya masalah kembung perut itu tidak muncul.
